Mushroom production is a relatively new project for us here at Siena Farms, and so far it has been a whole lot of fun, with very delicious results! Simple controls of temperature, humidity, light and air exchange (like us, mushrooms breathe in oxygen and exhale CO2) have enabled a steady, year-round harvest of fresh mushrooms we can now offer to our CSA members. Currently we’re growing shiitakes, lion’s mane, blue oysters and black pearl oyster mushrooms – and we’re so happy to share them with you!
